Do you also have sheep? They don't just magic into existence, they have to be bought at the livestock trader initially.
Someone in another thread also mentioned that the livestock trader has capacity for 5 sheep and those slots get filled first, so if you have sheep do you have more than 5? If not they're probably filling the traders slots rather than showing out in the pasture.
As for linking associated structures together I don't think you do, the game just sends assigned families to go work in whichever fields need attention for farms, and probably does the same thing for pastures, rather than explicitly assigning which fields/pastures belong to which farm. This makes extra sense for sheep since you can have fallow fields be used as pastures with an upgrade, and if you had to keep manually reassigning which fields were associated where that would a messy PITA to deal with.
