Eggs are amazing but you need to REALLY invest in them, despite what you think you get 1 egg per Month per plot you build the coop in.
What is happening is that as you have a small amount of eggs they are getting consumed before you even see them - so it looks like they are not being produced.
The ones that are not being consumed will be stored in your market stalls.
So an example:
100 Families and 70 Burgage plots (as some are double plots) if you have 3 food sources and Eggs will be your 4th. So you invest 35 Plots to produce eggs
So each month on average 25 eggs will be consumed, leaving 10 over which will go directly to the market. if this repeats it will take 7 months to reach 70 market cap for eggs and only then will you see eggs in your storage. - this example assumes your population is not moving to help the math.
Tip for you: if you invest in eggs do it big, when you reach a certain point that you have a load of eggs being produced and spare other food - build a storage just for eggs and do not allow to go to market - once you have enough to give you a months or two buffer then allow them to go to market and you have a constant additional food source.
Even at low levels eggs are good even if you do not notice. 1 egg per plot means you are saving 1 other food - as food is worth 2 this means that the egg pays for itself in 12.5 months. If you have spare month eggs are a great investment.
For those that do not know if you click on an individual market stall you can see what it holds - it is likely you will find some eggs there.
One thing I've learned is to remember there are 2 settings when looking at the resources at the top right of the screen. Two modes. Surplus and Actual. Had me confused at first because I was like, "How can you have a negative amount of a resource?".
Just think of it as a way to get a secured single food source without any effort to that household.
To be fair, veggies are sort of that way too, the big ass veggie fields breaking everything kind of kicked veggies from 'feed my self and fob off the bit extra' out the door, hah.
