You say it "starts off good" and yet you haven't even worked out how to get more families to join... Exactly what start are you talking about? Chopping trees?
The game explains how to get families to join your settlement. I imagine your approval is still around 40-49%. Do something about that. There are only so many things you can build at this stage you're at and you have obviously chosen not to for whatever reason.
Also growing does not take much, just 50%+ approval and a few houses. Which should not be that hard. Just give them a market and some meat and new people will join.
Some games are not for everyone. Clearly this is not for you. Skills are required. Have a good nap !
The most reliable is to beeline for the church. You start with enough stone for it so all you need is logs and planks, which is two buildings.
An alternative is to build up your food diversity, you should have meat and berries in your province so adding chickens and/or vegetables will also give you a positive morale bonus.
Do some, or all of these to push yourself above 50% and you'll have families join you. Until then you will need to shuffle families between buildings and prioritise a little,
