What is the point of assigning a family to the storehouse/granary?

They maintain a larger stockpile than gathering structures, distribute the goods more quickly, and can run additional market stalls.

They bring the stuff from where they are produced to the storehouse, and then they sell it on market.

Definitely it looks like it doesn't matter at the beginning, I had the same feeling first. But as the guys above said, extra helping hands. You will see the difference later on.

And the church? do they just bury bodies? With no family assigned you still get the church bonus to opinion and meet the burgage plot requirement... so what other benefit is there? cheers.

I would like to know too. Not assigned people still will take care of animals.
It should prioritize them to use the stables and, for example, they also should ignore building or transporting the goods with bare hands but I'm not sure if that changes much.

once your townsfolk die (from exposure, for example), they need a place to bury the bodies. This is done on church grounds. if they can't bury the bodies, you'll get pretty major dislikes from your folks. Not sure if at some point it also poses a health risk in-game.

I think they just become gravediggers to bury bodies, like you said.

Ok cheers, I thought it was that - seems like it is worth keeping it empty then until people start dying if there are no other passive buffs etc...

From what I've read in the ingame tutorials (I think, perhaps somewhere else) families caring for the animals increase their walking speed and with that the whole transport stuff.

For the stable: that villager will permanently be assigned to guide the ox, and carry logs to construction sites or the sawpit.

If nobody is assigned to stable, the livestock sometimes get left behind while the next family take over.

Efficiency. That fam becomes the transporter family. Meanwhile the production families dont waste time fetching the ox and then transporting, so they stay more productive.
