Forgive me, but I'm not sure I understand what you mean exactly.
The way to swap the default is to toggle that button. Then they will always walk until you toggle the button again. Or are you asking for a keyboard shortcut?
I wouldn't mind it but I don't think it will be added as a feature into the game.
I say this after having played many RTS strategy games. In which units are either on run or walk by default (depending on what the developer set it to) and then it is up to the player to control or set their own preference after the unit has been created.
Some games have keyboard shortcuts to save a few clicks but to my knowledge I was never able to set the default run/walk mode before a unit was created.
I think we're stuck with trying to remember. But after playing for a while you will automatically remember to toggle the button. :)
I agree it's something that should get forgotten less and less with time and repetition, but it would make sense to either change (or allow the player to change) the default pace, which is the sort of feedback early access should provide IMO :)
I wouldn't mind having that option or just more options in general.
Be sure to make a post about it in the feedback section of this forum. It seems like the only way to leave suggestions atm. Or maybe Discord and Manor Lords reddit if those exist.
