Medium plots for industries and tend to place them on the outskirts of your market squares close to resource points to increase efficiency.
Large plots for gardens (not sure if the size really effects goats and chicken coops but it does for apples and vegetables). I really would only recommend making gardens as they have a massive output in comparison to chickens which barely make any eggs for 10 more in cost. I think the average I do is around 10-20 houses of gardens and that outputs around 125-250 based on plot size alone every season. Not sure if intended, they also seem to continue production in Winter so it can help make your bread stores last longer.
Alternatively, you can just import the ale itself to supplement consumption. I find that in general, you have to rebuild a lot and it's easier to just have your original plot stay as industry and then turn another region into your main residential or vice versa, move all industry out.
I wouldn't worry about deforesting to this either. Meat is a very ♥♥♥♥♥♥ income for food in comparison to mass wheat and vegetable spamming which you can also use to get the achievement of no foraging. It took a couple of seed retries to get one with almost entirely fertile landscape in the starting region as even though the map is more or less the same, the location of resources and their fertility/yield rating changes.
One thing to note is that some of the resource upgrades seem to not function as intended. For example the Bakery for Level 2+ Houses doesn't seem to have increased efficiency and since you cannot assign more villagers to houses in the same way you can an industry, I still find Communal Ovens to be more efficient.
In addressing the original comment, one Malt building to every 2-3 medium plots of Barley is more than enough to sustain one brewery but you will need at least four breweries by mid-late game if you go all the way through to have them not constantly bottleneck at one point or another; or import to supplement the shortages.
