Make sure your Storage and Pantry facilities have peeps assigned and they will do their best to keep the production facilities running by transferring goods to market or bulk storage.
Where possible assign a draft horse or oxen to speed up the process.
Just be mindful of having a forester to replant...
then assign oxen to the others that don't have workers.
Storage fills on the un-worked lots, while the workers stay busy on lots that don't collect logs.
Build and staff your storage warehouse near your firewood cutter.
The further your workers have to haul good, the lower your production efficiency will become.
The original question was about the firewood cutter.
Make sure there are still trees in the area where they are supposed to cut.
You can always assign a work area, they will start cutting.
Make sure you have a staffed store house that accepts fire wood.
Make sure there is a market available and the store house is set to have market stalls.
