"Thresh Wheat into Grain" usually stumps people because the farmers only do it when they have nothing else to do. turn your fields to Fallow or wait until winter hits.
Also grain/flour tends to get transported to a Granary first, which can be frustrating, so you might want to build a Granary near your Mill/Oven.
Your default for any storage, anywhere, of any kind should be 'all off'.
Hell, you should barely ever build them. Especially Storehouse, other then some niche cases with literally an item or two, you should have ONE. Singular. One (again). Firewood/charcoal. Never have market supply problems again that way.
Doubly so by not storing all the random crap your people make either. You don't need to 95% of the time, and doing so just messes things up.
Also? It's pretty clear...wheat in itself, regardless of the type, is pretty useless. Which is why the farmhouse says 'Threshing' a few times between its description and literally as an option... And...bread is made out of flour, and flour comes from ground grains...

Idk why you seem to have such a big animosity towards people who just bought the game. If you want people to learn something, scolding them isnt gonna help...
