Correct strategy for setting up stalls
Is it true that it's better to disable "Enable market stall setup" option for woodcutters, hunters, foragers, etc.. and instead assign many workers to storehouse/granary?

Will the storehouse/granary workers automatically set up stalls for everything, and that way woodcutters & hunters will only have to transport their goods to storehouse/granary, not spending time about markets. Is that the right strategy or not?

I let the woodcutter, hunter, tannery set up stalls right at the beginning and let the storehouse and granary workers take over their stalls once I can spare the pops to work them. I believe the storehouse and granary workers do all the collecting.

This. The whole point of the storehouse and granary workers is that they use carts, which can transport a lot more goods at once. So once you can properly staff your storehouse and granary, let them handle the market stalls. As this frees up a LOT of time for other people to do other things.

Thank you for this clarification. I built a granary directly next to a forager's hut (which is on the remote edge of the map, far from my town center marketplace,) but noticed workers walking to town with a handful of berries and then schlepping back to the hut...
Now I know why...

How many carts do they have for each storehouse

There is no amount of carts they have specifically. It's just "people working in the storehouse/granary use carts automatically to transport goods."

I only allow the granary and storehouse workers to set up stalls and I build them right next to where I have my market
