They used to take maybe 1-2 years to reach full production value, I feel like it's more like 3 now.
Not sure when veggie main harvest month is tho - or if they even have one right now. I've watched a lot and haven't noticed a major spike in total amount, like I do with Apples in Sept. Occasionally it does spike a little in autumn months but unsure. Maybe it's more of a general monthly amount over non-winter months for veggies,
That said, with enough of them (you have to build more plots relative to increasing population), I've still built a surplus of veggies (and apples) - but along with needing more plots/land, it takes a lot longer. Many game years/many plots for surplus. At least, in my saves. Maybe my people just really like veggies and are eating them first at times, like how in one save berries were the high surplus (not a rich berry node) and in another berries were almost zero from the getgo etc. lol.
Edit: and of course, if the people in that house are too busy with other things, it could be slowed even more
In the long run all plots seem to equalize since there's no planting ( or harvesting, I think?) going on during winter.
- In november, my veggie farmers grabs a few produce before december starts.
- in March the following year, they will fully harvest the whole plot but unlike the previous patch they will also harvest in september but in this new patch, like what i stated above, they will only grab a few in november.
Also note, my veggie farmers is unemployed no assigned task for them so they can focus planting and harvesting veggies.
At least this is the case in my save game.
Apples are a single large uptick in Sept. Both are from a save in Year 11, so all plot-fields are mature for a long time.
Foods seem to be consumed at a regular rate during the month (eg, 1 or so every 2-5 seconds at 12x) but there is also a decent down-tick consumed/removed at the end/start of every month. Which could/can cause a brief "a few houses aren'thappy" thumbs down icon before market readjusts and it balances again.
That said, I don't know how the "random preference" for foods work, and that could skew some (monthly) consumption numbers in terms of my simple observation - as in, some foods some months may be consumed more/faster, then flip around next month, I wasn't trying to observe that aspect very closely etc.
