Really slow.
Both are decent for PvE, but Su is less likely to drive you nuts.
With Red Build, I try to focus on triggering Fushi-No-Jin just before an enemy attack, and when an opportunity presents itself, I start murderizing the enemy with Greataxe: Rengeki,
Green Build is more focused on evasion. Murasaki's Critical Dodge skill, Tentacle Mines, not only slows enemies down, but it also devastates the enemy's defense with full Green build. Even the less impressive skills will deal great amount of damage with the enemy's defense stripped away.
Su specializes in combos and evasion. In a recent patch, she gained the unique ability to continue her combo even after dodging. And her combo hits rather hard!
Unlike Murasaki, Su can get staggered more easily. But many of her skills have Super Armor effect on them, which can help you execute powerful skills without having the skill interrupted - like Nakuryuusou. Or alternatively, you can also just use her Critical Dodge skill's, Ryuurinkou's effect to buff your damage. But whatever build I've used on Su, I've always included the combo enhancer skill, Taimanin Art: Blaze Dance.
Murasaki is indeed on the slower side, but you should go in knowing that you can also avoid the skills that leave you stationary altogether and gear up for mobility instead (you will need to think about some good green supporters for that). Her basic hits are very wide, and her rate of swings isn't THAT slow. That coupled with her super armor means you can get in a group of enemies and mow them down even if some try swinging at her.
Now Su is on the other end of speed and mobility. She plays closer to how a "boxing" ninja would (imagine a tiny female Kiryu in boxing stance), so you deliver many more hits, but usually against a single foe; your dodge button works like a sidestep instead and you get to do 3 in a roll, so activating dodge skills is easier too. Again, because of how this game works you can spec her for different "tastes", so if you don't like those arm blades coming out of her gauntlet, you can just not equip her combo extender; but if you do like them, there are different skills to synergize with each taste of Su.
Haven't got Su though.
One thing to keep in mind about Su is that her Ultimate is not a single field-wide attack, like some of the other Taimanin (such as Sakura or Yukikaze). Instead, she goes into a super mode, and her attacks become larger, wider, and stronger.
