Instead, just use more brake on turn entry, and sometimes double- or triple-tap the brakes if you're desperate.
Just remind yourself when you go to take any corner that the handling in this game is closer to Burnout: You need to quickly tap the brakes and then keep the throttle pinned to sustain your drifts.

Using the handbrake has absolutely nothing to do with the mode and series. It depends on the car, the speed, driving conditions, and what you intend your car to do. Saying it's only needed for interceptor and most wanted makes no sense.
How many hours of gameplay do you have for this game including the original?

I've got well over 2500+ hours of game play on the original and remaster combined since 2012. Based on what you said I'm pretty sure you don't have more than 100 hours. Whatever answer I gave here is based off my experience in this game including playing battles and along side some of the best players in this game, worldwide.

I have issues winning gold in nearly all events about driving cop cars to reach the destination without taking penalties. I always end up hitting something and that quickly lead to panic and frustration and it's all downhill from there. Any tips?
If all else fails, abort the event and go back to something you feel more comfortable doing.
Just try not to rush too much when you think you might hit something. If you see a car/wall coming that you think you might hit it, then release the pedal without using brakes as much as possible. Then when safe, use your nos to get back up to speed. It's also an event where your drifting skills really come into test as you don't want to nick the wall or hit cars. Personally, I restart the event every time I hit something, but that's probably going too far unless you want to be perfect on the event. Additional tip: Try not to overuse your nos as that could also lead to hitting something. Once you get enough nos, use it on straight roads as it helps to maintain better speed for longer time.

Yeah the game had me rage quit a few times.
Do we cause damage to other cars by slamming into them in normal races? To a point where AI opponents become wrecked? Thinking of this is one way to get rid of them / get ahead.
