i think they removed the knight inspired armors in the game, since in the second game you dont visit Europe stages. But i could be wrong/ Other than that you would have to get someone to mod a knight set in the game

As far as the base game goes, the closest thing you can get to the knight set would be the Platemail armor set that's a mix between Europe and Japanese armor. There's a mod however that replaces some armor pieces with the full knight set from the first game on Nexus. I would post a link but i don't know if it'll show up.
