What I normally do with Yatsu-no-kami:
Regarding her charge attack, I avoid burst countering it. Instead I just throw a shuriken at the head while it's slithering towards me and that stops it. If you don't have Ninjutsu, then either shoot at it with the bow or let it run its course.
Every boss is pretty challenging on the first experience, but once you've killed them a few times, some of them become pushovers while others become slightly easier to deal with. Yatsu-no-Kami is definitely in the pushover category.
I also suggest imbuing the weapon with lightning.

Gee, I wonder if the fight is supposed to be tedious or if maybe you're playing the game wrong.
Aside from that, to be fair, the hitbox on the charge burst attack is pretty finicky. The easiest way to counter it is when he's lowering his head, right before the charge starts. If you always stay in front of the boss, that should be easy to do.
Well, one safe opening for my fighting style maybe. At least i didnt really found many more. and since everything in this game oneshots or stunlock you i was not in the mood to experiment 3 hours to find every safe moment and counter in a fight that wasnt compelling at all for me right off the bat and rather went for the safe way.
I mean badass players like yourself fight that snake two times and know all the moves and can beat her with one hand tied to your back apparently ;)
Block. It prevents the stunlock. Then you can instantly dodge away.
As for the fight itself, I like Yatsu as a boss, but I've not really found many ways to beat her outside of what you describe: wait for openings and punish, most notably during her move where she shoves her snake-arms into the ground. Make sure to use sweeping attacks during this window so you hit both her arms AND body, as killing the arms, even when they are detached during the dark realm phase, will cause big damage. I agree with not trying to burst-counter her, as the timing is awkward, and you can just hit her when she slithers past you when she does her unicorn charge move. I also haven't had much success trying to circle around her to find openings - she loves PBAOE attacks, which will ruin your day.
As the mission leading up to the boss is long, you'll probably have Yokai Shift available, use it towards the end of the fight to finish the boss off when its attacks become more dangerous.
As always, good gear also helps. Try fighting some revenants for purple equipment, or alternatively try tempering some of the purple gear you have to get good modifiers. You could also summon a blue revenant or two for the boss, having someone else to take aggro helps tremendously.
Dark realm triggers on certain levels of enemy hp or when the bosses ki is depleted. if you never deal ki damage youll likely have to deal with 2 dark realm phases. if you deal ki damage then possibly more. later on the dark realm phase becomes their weakness as it allows staggering them but thats in dotw/dotn, right now you might not want to deal ki damage to bosses.
After the snake, the diffivulty will drop significantly, so dont get intimidated/frustrated, its really the last big hurdle for you to overcome. You might obviously die later on, but itll never feel as uphill ever again.
I know that already but its still a bad habbit from other games to dodge away.

I thought the game was quite easy until i fought Yatsu-no-kami, i normally roll in games as well, so blocking her tail whip took forever to get used to and i had to rely on killing the snakes when they were underground to beat her. The only way too shorten yokai realm is to do a lot of ki damage. The game gets a bit easier after that fight, once you learn a bit more everything becomes a lot easier. I never struggled with another boss until the last one.
