the only moment you might think its unfair is the third boss fight if you dont remove the poison pools, yeah spoiler, sorry. the first encounter with ippon deitara on the second mission might also lead to a death that feels unfair, but youll overcome that guy eventually.
Also there is always a shrine close to the boss fights, so you wont get punished too severly for losing. unlike in sekiro for example you can also outgrind every opposition.
That’s said, I don’t think Nioh 2 is unfair: challenging. Hard, maybe plagued with some RNG BS here and there, but not really unfair. For me, it has become quite addicting.

Only unfair thing for me in the series were the double boss battles from Nioh 1. But there is no such thing in Nioh 2.
Only finished the main game but i would not say its unfair. Its very punishing at some points and can be quite annoying sometimes.
But thats the way these games are.
If it feels unfair or cheap most likely you do something wrong or missed something. Try something else.
Dark Souls has more than a handful of scenes where you just yell "♥♥♥♥♥♥♥♥!" at the screen because you literally had absolutely no way to identify and prepare against these - and your only way out is by memorization after each failed attempt (Sens Fortress anyone?). Nioh as a series on the other hand is very deliberate about this. You can easily spot all of the traps they set out for you if you are proceeding cautiously and attentative.
Most of the time I died through level design in Dark Souls I was just frustratingly calling out ♥♥♥♥♥♥♥♥. Most of the time I died in Nioh I sunk my head into my hands and just whimpered "I am an idiot...".
Or if you're a purist, it's possible to beat all encounters with only attacks, of course.
I usually always blame the game but deep inside i know better. 😆
Sekiro and DS taught me "other ppl can, so can you". If you die yoz musst be doing something wrong.
Only real unfair things are rng or if the game dont give you what you need to win.
And yes beeing careful is a big part of these games.
Once i didnt had much health left but wanted to go on. "Oh just an Enki blocking the way, these are no thread abymore" he killed me😆

If you dont run in like in AC where you can just kill a whole warcamp you should be alright.
The first playthrough was pure suffering, all the latter ones were pretty relaxing, including the highest difficulty.
Honestly, the difficulty curve is pretty crappy in the game. NG should be easier and WotN should be way harder.
