Do note, however, that in the case of stockpiles and shelves, that applies to each specific "tile" of the storage, because each of those is considered a single, independent storage location.
So, for example, if you have a length of shelf 5 tiles long all set to exactly the same settings, it will still allow 9 total stacks of any given item when set to "one stack per accepted item" because a 5 tile long shelf is actually 9 individual shelving Units (with 3 shelves per shelving unit).
As for the "allowed slots", that limits how many total slots of that storage location are allowed to be used at all. So an animal feeder, for example, has 3 slots normally. But if you set it to only 1 for allowed slots, then they will only fill a single one of those slots when feeding the animals.
I use long rows of shelves a lot, because they are space efficient for storage, but I configure them independently, generally in smaller groups than the actual full length for granular control of the total resources available.
