I dont think it affects furniture tho
I'm 90% sure it's just an aesthetic choice. So, go with wood or stone for functionality at first and then make it look nice with metal/brick/concrete when you have an abundance -- assuming that you care.
On the other hand, material type does matter for insulation and HPs when it comes to the actual structure/defensive walls/fences. You can mouse over a wall material and it will clearly state its HP as well as how well it insulates.
So -- furniture material doesn't matter and structural material does.

Its best to build refrigerators, they have better capacity than shelves and are quite cheap to build. Just turn them off, and keep them in a room with air conditioner set to - 10. This will turn your fridges to freezers for quite a cheap cost, as long as the room temperature is below 0, everything inside the fridge is frozen too. One air conditioner has electricity requirement like two fridges, but he can even freeze everything inside them. The more turned-off fridges you can get into a room with subzero temperature, the more efficient your built is. And there is second benefit that in case of massive heatwave you can turn ON your fridges/freezers in this room and improve protection of your goods as these heatwaves tend to penetrate even best inaulated houses.
In terms of materials. Use and plant trees as a start. But get a pacifier crossbow ready soon and acquire scissorhands (male and female) at the nearest base defense when they appear. They will be producing stone for you simply for your caretaking and you will have enough stone/concrete to turn you whole base into solid fortress. Basicaly making stone a repkenishable resource 😎.
