is there a difference in bed types? stone, wood, metal. and also is there a difference between the type of sheets (fabric, leather, etc.)?

Only difference is resources used and the look. It has no bearing on their sleep.

Carbon bed will get the "Slept in an amazing bed" +14 bonus.

Also, here are the the other Carbon Fiber furniture bonuses:

Table & Chairs: "Ate on a carbon table" +10

Armchair: "Relaxed in a comfy chair" +24

yep, those bonuses came with the advanced furniture in the Guardians DLC.
