Yes, the only way you will get meat in the game is by harvesting it from slain critters, at least until you get the tech to print it.
Haven't started hunting yet either, and on year 2 now. Haven't decided if I want to tame animals either yet. Fearing lots of extra work for little gain :)
But tamed animals can be domesticated for meat and furs, I've seen, so it's a nice option to have.
Sir, Stranded Alien Dawn----It's not real. You clearly said, "I prefer to kill humanoid creatures". Let's allege that, If you can murder people in GTA or hang NPCs with a lasso in RDR and distinguish it from real life, shouldn't you be okay with slaughtering so-called peaceful but based on "real" animals---IN A VIDEO GAME? I'm gonna say it again: IT'S NOT REAL. Note that people may or may not mean humanoids by your definition. I'd love to hear your clarification because the argument is ill-defined right now.
I mean, it's one thing not killing animals in a video game because it's a challenge of wills versus circumstance. For example: I want to see if I can get off planet without killing one animal minding it's own business (aside from aggressive bugs). That is respectable. That is commendable if you can play by your own rules that way.
But to balk because an animal in the game is essentially a bot-driven thing and to get some kind of angst worrying about "killing" these (and I know you never said anything about angst, but that's what I'm interpreting what you say "it's not my cup of tea") - that's a flag to me. I mean, why bother with video games at all, then? What kind of standards are you advocating if it's ok to murder humanoids in one game, but you draw the line at animals? Please explain the sense of it. Now I would understand if you hated senseless killing of anyone, including humans and/or humanoids. It's perfectly okay to stay away from violent games. Yes, that's ok. But, going back, you did say you prefer to kill humanoids. I can only assume you're generalizing because where does one draw the line with humanoids versus humans going forward?
I don't want to debate with you nor offend you. Seriously. If you don't want this game, we can't force you to get it.
But also as a caveat, you DONT have to kill animals if you don't want to, but you may find it a serious challenge because certain foods you make will be dependent on fats derived from slaughtering animals. But you can make non animal-based fuel from their manure though, for example.

You can often find them already dead via animal on animal fighting as well.
Currently the most annoying are the birds.. they run around killing everything.
Then there's the nesting alien bugs, they kill anything that wanders nearby.
Then there's some carnivores that chase stuff alot..
Then sometimes rocks land on them.
Then there's the ones that get stuck in your traps.
And finally, you might shoot one or two..for being annoying.
As both Rolf and Bjørn mentioned, you don't have to hunt for animals to get food or hide. You can use vegetables to make both food and clothing (veggie leather instead of animal leather, to name two).
