you just have to give them time in which they do nothing(rest). a question mark will appear on their portrait and their happiness will start to increase.

I've been using this as my default schedule and it seems to work ok.

Anything apart from - Sleep 0-4 (5 hours seems to be enough), Work 7-11 & 14-18, Relax 21-23

Also look at thier Traits tab. For example Zander is a Night Owl. So I flip his hours around so that he gets up at 17:00 and works during the night because that makes him happier.
Some others need more relaxation time so you may need to adjust to give them a little more 'Relax' but a few hours is probably enough anyway

I just changed it to anything, any time. Got to year 7 without an issue.

22:00 Sleep --> 3:00 Anything --> 6:00 Relax --> 8:00 Anything --> 12:00 Relax --> 13:00 Anything --> 19:00 Relax

late night Anything sleeps until 100% Fullness, Work isn't required.
