Personally, and I'm not really gonna crack out like numbers/spreadsheets/etc but just list out some monsters I was impressed by.
Squirey -> Palangolin
Puppercut -> Southpaw
Both these guys are pretty solid. And they're right inside the park right after the first boss fight.
They're fast Melee beat sticks(Southpaw having a bit more damage/defense, Palangolin faster+HP) You'll find a lot of poison early on in the game letting them get Contact Damage bonus, and can pick up a good selection of moves. Heck, Southpaw picks up Superheated Fist which helps out in the early/mid game.
If you're around Autumn Hill, Allseer and Bulletino are good pick ups, turning into monster ranged damage dealers.
Final monster shout out is Mardiusa(Carniviper's final evo pick Elegance when offered). It picks up Two Heads which gives it Multistrike at the start of combat which leads to some VERY funny combos. Tip - If you pick it up, give this monster AP steal, it's rather funny.
OH one last thing; While it might not be something to use in regular battles, Dodge is pretty handy to have I've found against some of the tougher fights.
