Has anyone else noticed this written in blood on the door of the room you wake up in after finishing the final trial? I've only seen it the one time and never saw anyone else talking about it...

Yes, it can appear randomly, it isn't always there. Just like the graffities in the lobby. There are other random graffities in that hotel room too.

Saw someone say it has to do with the number of times you've been Reborn. Different messages appear at different milestones. Dunno if that's true or not.

What other things do you know of? I just hit my tenth recently but I just rush to get the rebirth over with and the only reason I saw the one I did was because it was smack dab on the door

If I remember correctly, I saw graffities on the bathroom mirror and behind an armchair in the bedroom. I cannot recall their contents, though, maybe something about dreaming.
