Where is DLSS and why is HDR greyed out?

DLSS is probably resolution quality.

And HDR is probably greyed out because its not turned on in your system. You have to activate it in your system first.

I think dlss and hdr is just not available for this demo version.

70 to 90fps with max settings, 2560x1440 resolution slider set at 50%

It's turned off in the demo.

Yes, there are some limitations for the Demo. There will be more options in the final game.
