If they think they can get it right here, that'll be the reason I purchase.
And I've never seen a single game with "optional camera" where at least one of the two wasn't complete trash.
But often both options.
I'll vote for "Stick to one thing and try to do it properly".
Which for a Gothic remake must mean third person camera.
Everyone and their grandmother is pointing that it would probably be a terrible idea.

Gothic First Person View
If they implement it like this it's a start.
I would personally like to see it In-game as an Option and if they implement it with VR perspective in mind (Proportion/Size and 6DOF) it will bring new experience to the game.
Playing the Demo and watching Diego in the Dialog Scene made it very convincing.

And if done right Easy transition between Third Person and First is possible.
The Intro Scene was all in Cinematic perspective and then it adjusted to 3rd POV the same can be done for 1st POV. Cinematic to 3rd POV
Aside from the Easy to do Interaction(Not needing big change), Combat will be the difficult part (Removing/Reducing all nauseating effects caused by excessive camera motion during attack and defense sequences). If not applicable In 1st Person, 3rd Person for Combat is plausible.

In all honesty it does not need to be all perfect in order to bring pleasure for all people deciding to replay the Remake in VR.
That said... Relaying a Game View of the game is an easy process done by the game engine and can easily be made possible using Console Commands if enabled by the Developers.
Such Commands can be added in the Options Menu as well if deemed suitable by the Developer.(First Person Camera Position)
It's something that is possible by old games like Counter Strike and it is certainly possible for Gothic Remake.

Implementation for Partial VR Support by 6DOF Camera movement plausible.
Provided they make the Game Engine Work With VR API like OpenXR.
(For it to start to communicate Image and controls to Headset).
Full VR is a different story and is just a Dream Option that will Certainly needs Time and Bigger Investment implementing in the game.

Turns out they use Unreal Engine 4.
The same Engine used in Handful of VR Games.
The UE4 already support it.
It is possible, Provided they have the Budget and "Green Light" to do it.

Compared with the first two Gothic games, it was also Gothic 3 that introduced the next generation Genome engine which implements a seamless open world. Absolutely golden when it comes to replayability, free roaming and meta-gaming, too.

No thx it's a waste of time and resources for the developers. And there isn't many 1st person RPG players anyway...so you aren't really that important
Every third-person engine, supports first-person and vice-versa. It's not a technical limitation, it's a design-limitation. Gothic 1-3 were designed for third person, but allows you to choose to move the camera to the characters head, and then despawn the body.
Severence: Blade of darkness does the same, but doesn't despawn the body(only the head). First person in both games is a worse experience than third person, as the games aren't designed for it.
100% agree though. Should be possible to do as Gothic 1-3, and place the camera in players head position and despawn the body. 0 development time, and stays true to original.
