The demo is a pretty ancient built where a bunch of stuff was different. "Hands are full" should refer to a "Large Item", of which you can only hold two (in the hand slots).

From the sounds of it (if I'm correct) you are needing to start the embalming of the body. It's pointed out in the demo (though certainly not as well as the main game) to have your clipboard on you. This keeps track of what tools you need to use when.

If you can't pick something up because your hands are full, press TAB to go to the inventory, select an item, and a drop button will appear under the description. Drop one of the larger items in your hands and that will allow you to pick up another large item.

Basically, you'll be holding the clipboard in one hand and using the other free hand to carry large items while smaller items go in your pockets.

Once you have the clipboard, press [spacebar] to bring it up and read what you need to do first. It will tell you what tools to collect for what step. As you complete them, they will check off on the list and you will need to do the next step.

Hope this helps.
