So yes, even if min sys req is below your laptop it might run anyway.
Remember regular DQ 11 in 1080p rarely reached above 2gb vram. the fact that on the microsoft store they recommend 6gb shows they are clueless and probably confused the recommended geforce 1060 as a 6gb version over the 3 gb- which is more than enough for the whole game- I think on my test I was around 1.7-2.2 at most, so where MS got the recommended 6gb vram I have no idea, but as I said, they probably confused the geforce 1060 (which Square-Enix recommended for the game, and was at that time the most common gpu on STEAM) , 6gb version with 3 gb since 3gb is more than enough for atleast 1080p... as I said in 1080p, th vram usages is 1.7-2 so anyone who think they need 4 more lives in a fantasy world, I mean even at 1440p the game is around 2.4-2.7 vram. But hey, I guess Microsoft assume recommended = 4k which probably then is 4-5 vram usages, wouldnt suprise me at all.
My point is, this game runs on a switch and a ps4. We know they (for ex ps4) use at most 2-3 gb vram (so pc version can recommend 6gb vram all they want, its not req) AND this game, in 2D was running on a NDS3D which is a weak gamecube basically.
