Ofc it is always safer to make multiple copies of the save you want to edit and personally I highly advice against messing around with the "Flags" section because that can actually break quests etc.
You can freely edit your characters appearance etc. though after the recent changed to the character appearance section quite some stuff that used to work doesn't anymore because the respective races/transformations do not exist in the game.
Changing the race directly, though, doesn't do anything because the game's racial score system determines your race and that's not something you can change with simple save-editing.
Just save more often and you'll be fine.
In regards to the flags? I haven't encountered a single crash in over 100 hrs of using edited save files, only the Flags caused weird behavior and crashes.
