No idea what to do to unlock or discover what I'm missing

I reached depth 1000+
I ascended with one specialization

My bestiary is at 1196/1201, I have no idea who's missing and when entering portals I don't meet new ones

I still have to unlock : Pariah, Deprived, Brewmaster, Gladiator, Mime, Engineer, Graveborn, Shadowbringer, Demonologist and Toxicologist but I have no project to unlock them when I check

I have no idea how to progress more into my game.

Have you unlocked the Cloth abomination yet? If not, get the Abomination plush, place it in your castle, then interact with it repeatedly until it gets fed up with you and gives you the Cloth Abomination summon to make you leave it alone.

Outside of that, I can only think of Godspawns, God shop monsters, Guild monsters, and Dumplings

The specs you mentioned are currently on the Test Branch. If you're playing on Test then they should be available.

Also, Kage. I had no idea about that cloth abomination. Thanks for mentioning it!

Well there's those backer creatures from the rainbow colored portals. It's possible you haven't encountered them all.

Edit: I'm assuming you have but just in case, have you gotten the creatures from the gambling dwarves shop and the arena shop?

There are also crossover monsters that can be rarely encountered in Nether portals: Mogwai, Tanucrook & Purrghast
Aside from those, go check the god shops for creatures you haven't bought yet. My last unlocked creature was an Angel from Surathli's shop, because I didn't bother to make use of that race.

The more you know : Said Crossover Monsters are from the Game Monster Sanctuary. Nice game at the start but the developers overdid it with the difficulty spike.

Only the first one. The second one is from Monster Crown and the third one comes from Coromon.

So I'll check all shops, I'll continue to explore more portals, I'll see with the Cloth abomination and the crossover monsters

There's also the Dumpling race; it has too many members for the Master to have all of them, so you'll have to fuse two members of that race together (the easiest is probably to have a dumpling primary and nugget secondary).

The way you said this makes it sound like you think you can get dumplings from the dumpling master.
Also each one has different requirements.
For dumpling you just grind 100 of them.
Nugget comes from 10 treasure golem fights.
Kind of a spoiler but frankly you'll likely end up having to look for such a spoiler anyway if you want to find them all...
The others come from various things while having a dumpling in your party (plain dumpling, not nugget or any other dumpling), pudding from fusing 2 different dumplings, and king/omelette require grinding with a full dumpling squad for a while (I still don't have king).

You can't obtain the dumplings from the master, but they'll be added to the Bestiary and that's what this person seems to care about.

Yes for now I only want to fulfill the Bestiary so Dumplings are already added.

I also did the Cloth Abomination thing to unlock it.

I'm at 1199/1201 and I know I'm missing one of the crossover monsters. So I'm very close. I still have to check every God shop since I checked everything else.

Close is relativ i have 200 hours on the clock and only meet one of them...

There's also Pandora and Thylacine, the former is really rare outside of a specific nether portal thing where you can guarantee it, while the latter requires checking Nethermancer Ned a full loop after he seemingly didn't have anything left to unlock (I think you already have enough floors for that?)

Shambler Benefactor was added in a minor update solely so that the "1200+ monsters" in the store description wouldn't be a lie.

Oh, and none of this is actual progression. You'll have to chase achievements for that.

I know what are the two missing monsters : Pudding and Mogwai

The first one should be easy, the latter I'm going to need a lot of patience and hope

Mogwai is a rare one that's for sure. I've seen it only a handful of times in 1600 floors.
