There are two tasks on Transylvania that require hunting at night, but I suppose they're not mandatory to the story.
At the last Q&A and since then - it's still an official "no, not at this time."
There most certainly are night time missions in the game, which is the reason why many of us expected to get the gear to complete them at some point.
It's massively disappointing to hear there are still no plans for night vision scopes/binos.
Maybe someone from the team could explain why they are apparently so against adding NV gear?
It's a local political/public safety/environmental decision in every hunting area around the world, the countries and states make the laws. Most to my understanding do not allow night hunting.
One specific example why no night hunting: deer react to sudden lights by staring into them, their reaction to it is delayed. Law breakers here used "Spotlighting" at night to illegally harvest deer; they put out a salt lick, or go to a frequented area, climb a tree or truck or hide and when the deer show up they suddenly shine a powerful spotlight, the deer freeze, and they murder them.
Night hunting in this game is probably the most difficult hunt, but totally doable without night scopes. Use the x21 scope if you need one.
Amarok - harvest a wolf over 30 Kg between 2200 and 0400.
Early bird - shoot and harvest a pheasant between 0400 and 0700.
What are the other ones? These are only the ones I have done or have yet to complete on my list.
EDIT - the Early Bird mission can be done when it is light enough to shoot by about 0600, and I think I did the Amarok mission by shooting the wolf at last light and then harvesting after 2200.
Lol it's legal to hunt at night in more states than it is illegal. Especially in states with boars.. and then theres hunting on private lands..
Did you mean states of the USA? First two hits on Google; are they correct and up to date?

Coyote & feral hogs are invasive to my area & night hunting is fine. In fact, hunters are encouraged to take them out whenever possible. It's pretty much 24/7/365 with no limits.
But in game my guy is in bed by 2100 except for missions.
NOW - let's examine WHAT you can hunt.

This is a sampling of what you can "hunt at night" I would add nightcrawlers to the list...
"Coyote, gray fox, red fox, opossum, and raccoon night hunting is allowed, but certain restrictions apply. Night vision and artificial light is allowed, provided the general night hunting regulations are followed.
Artificial light may be used when hunting frogs but may only be used to hunt furbearers when treed by dogs.
Badger, raccoon, red fox, hares, rabbits, ground squirrels, marmots, tree squirrels, porcupines, prairie dogs, coyote, weasel, striped skunk, and civet cat (spotted skunk) can be hunted at night with permission from the landowner.
Night hunting of furbearers coyotes, prairie dogs, and other nongame species is allowed, but season and permit restrictions do apply.
During season, night hunting of coyote and raccoon is allowed – but caliber restrictions do apply. Artificial light is allowed, but not from a motor vehicle, snowmobile, or OHRV. No restrictions for night vision are listed in the regulations and are therefore assumed allowed.
Night hunting of red and gray fox, coyote, bobcat, raccoon, skunk, mink, weasel and opossum is allowed. Night vision and artificial light is also allowed.
Raccoons, opossums, foxes, mink, skunk, coyotes, armadillos, and hogs may be hunted at night with caliber restrictions. The use of night vision and artificial light is allowed only when animals are treed or cornered with dogs.
Red and Grey Fox, Badger, Raccoon, Skunk, Opossum, Jackrabbit, and Coyote may be hunted year-round. Bobcat, beaver, muskrat, mink, and weasel have season restrictions. The use of night vision and artificial light is allowed, with certain restrictions.
Bullfrogs, raccoons, opossums, the chasing of foxes and rabbits may but hunted at night but foxes or rabbits may be shot while chasing/training at night. Private landowners may hunt wild hogs at night using a spotlight. All other use of night vision or artificial light is not allowed."

Keep your night hunting in the real world, because it's just a "clean up in aisle 3" crap shoot.
To shoot deer - special license from the government required, although there is pressure to allow more night shooting of deer as they are becoming a pest in some areas.
I am waiting for the list of night time missions that justify night vision equipment by the way!
