The .243 then. I am playing on EZ mode. You get a long of feed back. I get enough of the hard mode when I am out there bringing in real meat and dealing with the feral hog apocalypse. I shot at two big fat black pigs. Felt good about those shots. Got down to inspect, zero blood. Next day, I bagged two out of four. Redemption. Second pig I hit was running and he was a small one. Rolled him right at the treeline. :}
I'd aim for a double lung with a .243. Actually, with any weapon. Better odds than heart shots.
As for heart shots: if it's a direct hit (penetration damage), the animal will usually drop like a rock. If it's just cavity damage, the animal may walk a few meters, but will still die. That said, heart shots are trickier to do then lung shots, so I would only recommend them if you know the species and their anatomy well (e.g. I've called enough elk and had them coming straight towards me to know where to land a heart shot on an elk from the front, but if I shoot one from the side, I still go for the lungs).
Do you have a 100% record with head shots? Through the years I won't tell you how many deer and elk i've seen with their jaw blown off. Shot by hunters who thought they were good at it. The animas suffered as they starved to death.
I won't tell you what we did to hunters who were caught taking head shots. The head is a small moving target. Odds of success are poor. Give the animal more respect.
