Report a translation problem
Check:
1 - when you have shot an animal, choose the Taxidermise option (not SELL)
2 - go to your house
3 - go to a display stand and press E
4 - if the display stand accepts a trophy you have taxidermised, then it will let you display it for a cost
OR:
in your character panel, look at Taxidermy Assistant to see what animals you have to be displayed or ready to be displayed

For example, should the hunt be 5 stars? Does it take little damage? When I look at the taxidermy assistant, how do I know which hunt is suitable for the trophy and which is not?
I think you can exhibit any male animal, no matter how many stars, plus possibly some females like bears.
If you have the option to taxidermise, then the trophy is suitable

The trophies should work for any animal you saved for taxidermy, if you have the right animal for the right display. You have to pay to have it displayed. A list should appear for every display showing two details: how many animals can go on the display and what type of animal. If you have the animal you can click it to confirm your choice, then it will display your trophy. Each display is restricted to a short list of animals. Make sure you have both the money, and the right animal for the right display. Trophies have little to do with levels. Some animals only qualify for a specific display, like the two deer that form a heart shape with their antlers, others are generic.

But, as I said, if it is necessary to reach at least a certain point in the story, the trophy feature will not be turned on no matter how hard I try. I'll try as you say until I play the story part.
