Thats the fitness rating.
A mature above 85-90% percent is considered a four or a five star trophy.
With time/exps, you may be able to '' estimate '' by the color & horns/antlers, if an individual is old or not. Which could be signs of how he is fit.
You basicaly only see it when you have killed it.
That's how I played it & seen it.
So many questions, sorry, and thanks.
Animals with a high % will give better trophies when they are old.
I don't suppose there's a handy dandy chart for each star and its corresponding DNA rating for every animal?

DNA Icon needs more lattices.
Fitness: indicated in the second page of the claim screen, given in a percentage. This is determined when the animal spawns and does not change at any point throughout the animal's life. The fitness of new spawns is influenced by the average fitness of its herd and its habitat.
Trophy score: indicated in the final page of the claim screen, given in numbers from 1.0 to 500.0. This is a result of age and fitness, so it increases as the animal gets older and how much increases is determined by fitness.
Trophy rating: indicated in the second page of the claim screen, given in stars from 1-5 and the only value that can be seen before you kill the animal (assuming you are not playing on Ranger). This is a shorthand for the trophy score and as such also changes throughout the animal's life. Young animals can only be 1 star, adults 1-3, mature 1-5 (although sometimes bugged 4 star adults can occur). You can find information in the animal encyclopedia on which trophy score (1-500) correlates to which trophy rating.
The quoted part above - where can you see this data before you shoot? Tha would be vry helpful.
If you are not playing on Ranger difficulty (the highest one), press Q to activate Hunter Sense at any time. This will highlight need zones and animal tracks, show sound bubbles indicating where an animal sound came from, and, most importantly, allow you to see age and trophy rating of the animal so long as you are looking at with binoculars from a distance of less than 280 m. You can tell that Hunter Sense is on by the little eye icon in the top right and the darkened vignette around the screen. To switch it off again, simply press Q again.
