Not all romantic meetings (that's what it's called in the info tool tip about the villeins) end up with them asking the Lord of the town to get married. And you can totally veto them getting married, but I haven't because it seems somewhat rare that they ask.
I suppose it's always possible to replace families that have died out with new families, if you have an inn, or can use favor points from the King to buy families to come to your town.

Thank you for this detailed response, I thought maybe the marriage system was not working but now I think my peasants just don't have enough socializing time or places! This is a neat mechanic, if so. I've added some public areas with wells, campfires, benches, etc. and everyone does gather there off and on so that's great. I've only ever caught two single peasants having a "romantic meeting" once randomly (not at a public zone) and they got together and talked, but nothing ever came of it. Hopefully now that I've added more areas for socializing, I'll see some of these single adults hook up! ;)
