These menus would be so much better inside a megamenu/spreadsheet with all the workshops in the village where you can make those modifications instead of opening several windows devs.
Production for everything in the zone is 0 except for stone blocks, which is at 1. The family itself has plenty of stone, and there's stone on the market (and yes, they have a storefront to buy/sell)

The numbers are not priority, they are Relation.
So a 1 Stoneblock 4 Tiles just means that they produce 1 block, than 4 tiles, than rinse and repeat.
if its 2 5 they produce 2 stone blocks, and 5 stone tiles, than rins and repeat
I( hope they rename the masons to Stonecutters, because they do more stonecutting than anything else.
Masons were basically architects in the middle ages. They built churches, mosques, castles, etc. If our village had a real mason, it would go bankrupt after a month or two. hehe!
