There are a few factors that could explain what you're seeing. You could try changing the priority of the flailing tasks, or reduce the number of fields - or assign another family or larger family to farming.
In extreme cases you could turn off farming tasks entirely using the priority system, so they concentrate on clearing the flailing backlog. Just remember to change it back at some point...

That's a screenshot of the amount of grain I have and two of them sitting at the table "relaxing"
My family is also trying to sell excess unprocessed grains, but it's not stopping them also flailing.
Edit after testing: Barley, Oat and Rye don't appear to be converted into grain. Wheat and Rice do with their respective recipes.
I'm not sure if this is an error, but unless you have wheat in your stockpiles this might be why you're getting the behaviour you're seeing.
Thank you!
Is rye supposed to be able to be used for getting hay and grain or is it being saved for alcohol? Rye is a grain product irl so it wouldn't really make sense but it's what I'm thinking now, though I haven't had a brewer family yet. Perhaps there should be an option in the farm's production menu to turn on or off grain production from each of the grain crops?
I agree. This might be useful for fine control over production - assuming all of these crops are intended to produce generic grain.
It works fine if you just grow wheat. Or make walls/beds/etc. out of something else... The only thing that really benefits from straw is ranching sheep. Everything else has plenty of alternatives.
