how to make the bread chain more efficient?
so far in the demo the biggest bottleneck for me has been grain, bread, and metal processing. i would at least like to try solving the bread chain as we get so many people for it in the demo and the metal processing bottleneck is solved just by adding one or two more families as one miner family could supply all of them.

even with 3 farming family and the near infinite wheat bug production of grain cant keep up with its use in making flour. my 2 person families have farms 12x9 and the larger family gets a 14x18. i've tried letting them make grain from the beginning, giving larger areas and only making grain during the fall, cheating using the exploit, and cheat engine to give onetime bonus. with just one mill family of 2 they can out produce the 3 farmer families and adding a 2nd mill family currently is pointless. once the wheat bug is fixed its going to be even harder to keep up which will become an issue when they actually need food to survive :P

i've found that 2 bakers can handle up to 4 ovens but without more families they cant make bread fast enough to keep up with the cooks. the supply of flour is enough to keep constant production and the main issue simply seems to be not enough bakers provided in the demo.

the 2nd cook family has nothing to do most of the time as the first family can handle the limited production of bread.

as for fishing, the one family you start with is good enough to handle everything and the 2nd family you don't have the supplies to support giving them anything more then fishing rods which cant keep up with the production of the nets only first family. using cheat engine to get more yarn the solo fisher can easily handle 16-20 nets on their own.

First of all let me say I'm amazed how much effort you put in optimizing the production. It's very inspiring and I know there needs to be enough leverage for min-maxing strategies to work out well. The demo is problematic to balance on that regard because it's a very small cut from the full production chain and it's almost a scripted scenario, unlike the full game where you could expect more proceduraly generated / random growth and have a lot more options to choose from. It would be a lot of effort to improve this in the demo and I believe that effort would shine more if I focus it on the full game instead. Nonetheless, thanks for your input! I'm curious what you will be able to do later when the game becomes available should you decide to pick it up :)

Speaking of fishing, every new game I've the Fisher is always just one person. Does the fish make them smell so bad no one likes them? I'm joking, but I did think it odd they were always alone.

Indeed a lot of the families in the demo are hard defined and will always be the same. The demo is not meant to provide a lot of replayability. You can expect in early access most of the things will be fully randomized.
