And you don't have to use a Bluetooth keyboard if you want to connect one via the USB-C port and/or using a dock.
Also remember that the dock will allow you to use a monitor or flat-screen TV via an HDMI port, which is highly recommended for SWTOR. It just looks terrible on a small screen.

As for the choice of keyboard and mouse, make sure to check that they are Linux compatible before buying. SteamOS is based on Arch Linux and Linux does not handle peripherals like Windows does.
You might also want to consider investing in a USB-powered laptop cooling mat to lay the Steam Deck on when using a monitor/TV. (Too bad nobody thought of including a built-in cooling fan into the docks' design since they can interfere with air-flow.)
No, you don't have to use a mouse and keyboard to play SWTOR casually on the Steam Deck. It works just fine with the fully customizable control inputs that are provided by the Deck itself thanks to the two trackpads. There are even control schemes that have been uploaded by the community if you don't want to meddle with creating one yourself.
