Others have said that's where to go to unlink your account.
I can't log on swtor.com because I don't know my username and the email of the account was deleted

If you already escalated it all the way to phone support and they can't help you, this is the only option you have regardless of what you want. Doesn't make any difference in-game anyway whether you play through Steam or not.
When I go to the swtor forum, they say that to solve my problem, you have to contact them by phone, but when I do that, they say they can't help me. This system is trash. And no I'm not going to create a new account because I want my progress back and I want to unlock the achievements. They just have to set up an automatic connection system with steam like many games or just give the possibility to create more accounts from the same steam account but they won't because they don't care. Trash game
Again, you have the opportunity to play their game if you simply switch to the standalone launcher from their website and don't insist on using your jumbled Steam account.
All those recurring issues of linking accounts and buying stuff through Steam has nothing to do with them being "lazy and dumb", but because this game was designed to have its very own launcher checking for login credentials and not to have a third party platform like Steam as another layer on top of it with players forgetting their old account details. So it's not that they don't care, but that they are seriously understaffed and underfunded to deal with this fundamental problem as this game is on its last leg anyway.
No matter what the problem is, if it still exists, contact support and give them as much information as possible about your account. Names and classes on the account, special items. old Email etc..

No I am done with this game. I don't want to pay one more time to call the support and talk to a person who understand half my language. I gave as much informations as I could but they told me that they couldn't help me

If you remember the username, put in a forgot password on the website. If you don't remember the username, put in a forgot username using your email address, which will send you an email with your username.
Then, reset your password.
Log in with your username and password, still on the website.
Now that you've logged in, and I just wanna be extra clear here, we're still on the website (account.swtor.com/en/account), press the little button that says "Steam Account" next to the buttons for "Twitch Account" and "Change Email." This will give you the option to unlink it. Then, you can log out of this old account in your browser and log in with your current one if you wish, and you should be able to log in through Steam.
An alternative to Steam, if you don't remember the username, email address or even potential email address is to instead install the launcher from their website, still launching it through Steam if you wanna track play-time. You can't have problems with a linked Steam account if you're not using steam. This will require you to reinstall the game if you've already installed it through steam, however.
