Things I've unlocked with CC are:
- Crew skill slot (Can get by with the default 2 if you play a lot of alts like myself but I had extra CC so unlocked it for less hassle)
- Artifact equipment (So I can get all those vehicles out of my inventory/mail and use purple items I find/have)
- Additional Quickbar (Not sure if that was something they gave players back CC a while ago cause they gave everyone more bars or not)
- Additional Cargo Bay (I have a lot of alts so need storage for gear)
- Unify colors (Most of the time I hate mismatch gear so had to get this for my own sanity)
- Display titles (I theme my toons so needed this for that reason)
- Display Legacy name (I don't use mine much now-a-days but I use to so unlocked it back then)
- Crew member appearance (So I can use the customizations I get from quests/events)
And with the extra CC I've bought hairs styles and character slots around the anniversary which I think is when it goes on sale. I always use CC when stuff is on sale. More bang for your buck.
I won't use CC on gear, pets, mounts or flair since I personally think they are all over priced. Plus, I could always just buy it on the market if I really want it though most of that stuff is over the preferred cred limit I have.
Most of the unlocks depends upon the player but most, if not all, of the unlocks are not needed imo. They are more of a convenience then anything. Just figure out what would make your gaming experience more convenient and get that.
To each their own.
EDIT: Sub for a month, make a toon of the desired race you want, level to 50 (?) and it unlocks for whole server even when your sub is up and you become a preferred player. Or do what I did and make one of each race, level it to 50 and now you have all the races unlocked for the future. :)

I only ask because Id love to know what is a Legacy Wide Unlock, and what is a "This Character Only" Unlock
Where did you get the 1080 coins? Did you buy them? It's much better deal to subscribe one month, farm heroics for credits, and buy legacy wide unlocks like Rocket Boost. I can't recommend paying cartel coins for that one. Much better value to subscribe and buy it with credits.
For Cartel Market, everything costs so much 1080 doesn't go far. Species and Character Slots are pretty good. Those are 600 each. Species can be used for multiple characters with one unlock. Character Slots let you have more slots to try other classes/combat roles. It gives you an extra slot on every server, so one character unlock can be 5 slots if you spread your alts to multiple servers. Only good if you only care about story. Otherwise, it's best to have all alts on one server to take advantage of legacy bonuses.
That's the Collections window. If you unlock an item there, it is actually account wide. You can use it on all characters and all servers. Same for account wide unlocks on Cartel Market. They are a good deal if you play on multiple servers and have lots of alts.
Probably 100 complementary CC each month for using a Security Key and 20 CC each for some of the completed Legacy achievements.
Item expansions across all characters does wonders. Other then that I would look at some of the weapons.
When we speak to one another, we often use words to get the listeners attention before we say what we're really wanting to say. Some people also type the way they speak. Also, we often use filler words "uh, ah, so, like, etc". Take your pick.
