To allow you to switch ship would mean redoing all of them for all new ship options.
That'd be more cutscenes then the story updates we are getting in a whole year.
The reason they don't add new ships is that it would cost too much for too little in return. You need an exterior model for spaceports and the takeoff/landing sequence, you need an exterior model for the on rails space combat, and you need interior modelling. Why waste time doing that when the sheep will happily buy a re-skinned armour that took all of five minutes to create and has a 99% profit margin?
So you want a different ship? Play a different class (and tip, both of the force wielder classes share the same ship for each faction, so the defender for both jedi, and the dunnothenamebadasscorvett for the sith, rest has their own ships thou the coolest remains the imperial agent one)
