Yeah, go ahead and save the side missions for later. You can do planetary story arc, bonus series, and side missions at any time, no matter where you are in the story. Only class story can be lost if you choose to skip ahead.
You don't have to. Most of what happens in those games are covered by codex entries or dialogue briefly summarizing it as needed. Play what is most interesting now though. If you spend 80 hours playing the two earlier games you could easily get burned out by the time you get back to SWTOR, but if you're more interested in KOTORs, of course, play them.
The planetary storylines are the same for each class on that faction. So the Balmorra story arc on your inquisitor will be the same on your bounty hunter. There's a little bit of flavor thrown in, in so much as most missions have one or two class specific dialog responses but they don't alter the mission or story.
Definitely play the KOTOR games, you just don't NEED to play them to appreciate and understnad SWTOR. Like you really aren't missing out on anything important to the story, but there are a lot of little references and easter eggs.
