The Jedi Knights's mirror is the Sith Warrior on the empire, and Jedi Consular to the Sith Inquisitor, so they carry the same equipment on their classes as well.
If you don't insist on the storyline, you can play a Shadow. Force, Melee, Tankable, and Stealthable (which Guardian can't claim). They use Force but they cut things more.
The story itself is more in the background than the frontline, but there is no lack of story boss to kill. The skill cap is also higher - if you tank well you can ignore some boss mechanics with a well timed skill.
Edit: By the way, weapon appearance stamping have been promised for a long time and I'm not expecting it by now.
Shadow can stealth around if thats your thing they can get alot of pve content done really fast as they can stealth straight to what they need, kill it and get out
