If I had to chose only 1 and am okay with a bit darker mentality, then choose imperial agent. Otherwise, all the imperial stories are fun.
On the republic side I would say the smuggler is the most entertaining. The knight and commando has the whole hero story down. (Not bad, just not my cup of tea.)
The republic consular is very political. If you like politics you will enjoy.
They all have different flavors with light/dark/neutral choices. As a whole they are all worth the effort.
Most of the planets' stories are good at least 1 once through.
If you played the KOTOR series there are many references to them. If not it won't make a bid difference.
But all are good, much better than most RPGs out there MMO or Single Player.

Jedi Knight also feels really good, fits the narrative well through the whole thing, and the 'classic' star wars tale.
As far as the non-force users classes, I think Trooper fits the best all the way through to current content (as far as narrative goes). Makes sense that the career SF soldier would wage an unconventional war against the Eternal Empire. The Trooper's base story is fairly 'meh' even if it fits the theme very well.
Imperial Agent is great if you want a 'James Bond' style run and has the same fit as the Trooper (depending on what you chose).
Smuggler is great for the laughs and just being fun, but runs into the same issues in the later content as the Bounty Hunter. Just feels odd when the Eternal Empire shows up.
Assassin and Consular are unique and if you're into the whole 'mysteries of the force' and politics it can be a good time. Only thing I really dislike from those two is the Consular's voice. The VA is good, just irritates me for some reason. Both of them also fit well into the entire narrative.
The BH will always be my personal favorite. Feels very Firefly and I still think the BH gets the best crew, even if Skadge is the most worthless companion in the whole game. You just have to get past the whole 'gun for hire' somehow becoming a commander of what is basically another military faction that rivals the three already in existence (Empire, Republic, Eternal Empire).

What exactly is a consular as far as game play goes? Is it sorta like padmea/leia, or is it something else? I like the idea of Political intrigue and mystery.
Two, do all classes have male and female VA?
One last thing, I recall when i played last that the game didn't go from story to story and had a bit of that old MMO grinding. Great for people that want to game for hours, Not so hot for people that just want to see the story. Has this changed, or is there a way to shorten it, or perhaps side quests or something that fills the game with something more than just going and grinding mobs?
1) It's not so much political intrigue and mystery rather than a Jedi diplomat trying to immerse oneself into the history and culture that has shaped each planet and by doing so being able to resolve conflicts between the different people and the Republic.
You will find many people on the forums who will say Consular is the most boring class story, because it has the least amount of action and character development compared to all the other stories, but on the flip side you will learn the most about the lore of the game.

3) There is no grinding needed anymore to stay on level if you do both the planetary story arch and the class story arch in tandem.
Most players agree on IA being the best-written, which I agree with as well, but personally I still prefer the Sith stories, because why would I want to be a mortal wimp, when I can be Sith? ;)
And Consular sucks ass so bad… it’s so bloody boring, badly written, only the 3rd chapter somewhat improves, boring companions, including **the** worst companion, Lizardface.
I really had to force myself to play through it.
