Only difference is scenario. In consular you are pretty much THE healer and THE diplomat.
In knight you are THE jedi to send when fighting is needed because no one else bothers to do it or is simply to weak.
I’ve seen people who think it’s awful, and people who very strongly prefer it to the Knight story!
Consular meanwhile is the true Jedi experience. All brains, diplomatic, helpful, only engages in combat when absolutely necessary type.
The Jedi Consular story is about uniting the Republic (well, at least Chapter 2 & 3).
I think the Jedi Consular story connects with the planet stories better than the Jedi Knight story, but not everyone likes being a healer and diplomat.
