Do you still have access to the expansions after your sub lapses?

Yes after sub ends you have permament access to all expansions released to date and few other limits are less severe..
What you lose is essentially unlimited credit cap on character ( not on legacy bank ) so make sure that any character with over 1 mil credits deposits them into legacy bank or else they go into escrow which can be efficiently accessed only after resubing, purple gear can't be equiped ( unless you own artifact authorisation ), operations. There is probably more but haven't played that much of swtor recently to be entirely sure of what is and what isn't being lost after sub.

What happens if you have purple gear already equipped when sub runs out, can you still use those or are they just unequipped automatically?

You can still use it, but you cannot equip any new artifact gear.

You cannot have unlimited credits. The hard cap for characters is 4,294,817,295 and for the Legacy bank it's 104,294,817,294. Everything over that cap will vanish into thin air.

This sounds like a lot, but the game is in hyperinflation mode and valuable items are traded off-market for several billions a piece.

to achieve this much would require either blind grind fueled by rage or spend a bunch of money for things that may or may not sell well.
Hence i said unlimited. Only those very dedicated or veterans that have litterally nothing that they could spend credits anymore will have earned this much.

best option is to buy 2 months sub when new story expansion is release. You can play it even after sub expired and it's important to unlock as much as you can with credits, like more equpment slots, they will stay with you
