Jedi Consular story is about healing others and "uniting the clans" against the Empire.
Jedi Knight story is about being the savior of the galaxy and fighting the greatest evils.
Smuggler is about treasure hunting and getting rich - light side is a robin hood type (steal from rich and give to the poor or support the Republic war effort with your wealth)
You already know the Trooper story.
Many people find the light side stories boring because you are being good like you probably do in real life. For a lot of people it's more fun to do something they can't do in real life, which is the dark side route.
Ligh side sith warrior...now that is quite simply blasphemy and outrage surely...!?
That's what's always drawn me to the Expanded Universe over the core (movies) canon; there's a lot more room for complexities and shades of grey.
Dark Side Jedi Knight is a wonderful character as well. Arrogant, dripping smugness and condescending ♥♥♥♥♥♥♥ who completely butchers and obliterates all enemies of the Republic, which he also goes to reform from within, but in order to make it stronger by getting rid of weakness and indecisiveness which plagues the Jedi Order. Light Side Jedi Knight is a boy scout, which is beyond boring. (It also helps that voice actor for male Knight clearly enjoyed playing DS more, just listen to him having fun.)
In general these two options are best when played subversively. DS Consular and LS Inquisitor are not as fun, and other classes are fair game either way.
I don't imagine playing a DS Warrior ever, truth be told. It's just a bad, boring story.
My main guy is a Light Side Trooper who is willing to resort to questionable methods when he has to. Another character is a Smuggler who while leaning more towards light side, her greed, vanity and arrogance at times makes her willing to engage in questionable things as well, especially if it gets under her skin.
