Guardians do take less damage as a whole, though, and is generally considered easiest to play:

I don't know a lot about tanks, but I know Jedi Guardian/Sith Juggernaut have great defensive cooldowns, important if you get stuck with a bad healer. They also get some nice utility like Guard to reduce threat and damage taken by the healer. My feeling is they also have better AoE than Jedi Shadow/Sith Assassin. I'm not sure about Vanguard/Powertech. I saw a well-geared tank Powertech who did solid AoE. I couldn't pull aggro off him no matter how much I tried to burst AoE at the beginning of fights.
For Eternal Championship, strong classes are the ones with good mobility and defensive cooldowns. Jedi Guardian/Sith Juggernaut, Jedi Sage/Sith Sorcerer, and Commando/Mercenary fit the bill.
For all easy solo content like Heroics and Daily Areas, AoE is again king. That means Jedi Sage/Sith Sorcerer and Gunslinger/Sniper have the edge.
I don't do Warzones or Operations, so I don't know what's best for those things.
