As for stats in the endgame, what you're looking for is mastery and power, like every dd/healer class, so that doesn't change whether you play healer or damage dealer. What changes is what you want on the enhancements because you can forego accuracy and concentrate on crit an alacrity. As a sorcerer healer, you'll want 7 of your enhancement to contain alacrity (Nimble Superior Enhancement 80/80R-2/80R-10) while you want crit on imps and ear (Sha'tek Adept Device/Package MK-19), contain crit. You'll also want 12 crit augments and 2 alacrity, as well as 2 crit crystals.
As for set, I'm not too sure, my information here is a bit dated, according to my crib sheet you'll want 4xRevitalized Mystic, though I know there's another drop-only set that currently eludes me.

It's at level 75 and item rating 306 that you really get to enjoy set bonus and choice how to distribute your stat budget.
That Force Barrier set is very hard to get, and rarely recommended because Force Barrier has a pretty long cooldown. Most sage/sorc healer either use the bubble set or the rejuvenation set.
Like Fly said, when there is a choice, endurance should be lowest and mastery/power should be the highest stats. That part is easy. They are usually capped anyway so don't sweat if you can't get enough perfect mods. The tertiary stats, as we call the remaining stats, are less set in stone.
Generally speaking, healer don't need accuracy. In that case you may go 3206 alacrity for 1.3s gcd, or 3515 for 1.1s during mental alacrity (otherwise you only get 1.2s). The rest all goes to crit, well enough to push you over 40% crit with enough augs.
If you don't have that much stat budget, for example if you can't craft or buy or be sponsored aug kits and augs 73/74, then at least get 1213 alacrity for 1.4gcd. Again the rest goes to crit. The gap between 3206 and 1213 does not affect gcd, only ability cooldowns which only result in cd gaps.

Without going into too much detail, you usually want 1213 alacrity. normally, 1916 as a lightning sorc and 3208 as a healer sorc.
