Version .0.7 MK 48 torpedo's blowing up/disappearing shortly after launch
I have had numerous instances of mk 48 torpedoes disappearing shortly after launch from a submarine. I particularly noticed it when playing Pacific Strike

Same here. Also noticing they run aground on shallow maps no matter what depth they're launched at. The Pacific Strike campaign is effected by this bug a lot to the point where you can't use the subs as intented.

The submarine-launched torpedoes often choose to go deep, and they just crash into the sea floor in shallow seas

Have you noticed the Mk46/48s also performing poorly since the latest patch? I dont know if its just me but it seems like they got "dumber"

Are you moving quickly and are you targeting at an angle far off your course track so that the wires get cut?
I had the same problem when playing Cold Waters from time to time.

I had a similar issue launching torpedoes in shallow water (300 feet or less) by a Norwegian diesel submarine. The torpedoes wanted to run deep and then pop up near the Krivak or Rogov, and several torpedoes struck the sea floor or exploded near the end of their range on the run for a long-range engagement.

Torps at this point (At least heli launched ones) are completely useless. They refuse to track targets in their engagement ranges and will randomly veer off when close, even if the targeted sub has no noisemakers and is not moving. It's so bad I'm going to force myself to not play for a while because this absolutely ruins so many missions.

In my experiences the Mk46 and the Mk48s are most affected.

I wrote a bugreport for the Mk48. If the wire of an Mk48 is broken, it doesn't pickup a target sub. When on the wire and the launching platform knows the target position it will hit the target.
