Aside from the Air to air being a little borked, all you can do is give units a set of (limited for now ) orders.
The planes will indeed "dogfight" if they got close enough, but most Air-to-Air kills are BVR. I consider dogfights to be guns vs guns, and they don't usually close to that distance, although I think they will if it happen.
Control is more similar to a RTS/RTT game vs DCS which is first-person. The damage models and realism in Sea Power exceed what DCS currently has for naval units, while air units in Sea Power are secondary, and the flight models are more basic.
many sensors and weapons and systems have decent modelling. Flight models work ok for this game, but its not DCS or IL-2 flight models and its not trying to be.
You can actually get decent control of plane weapons , jamming and esm and ecm are IR seekers, radar guidance are modelled pretty well , but again its a simplification but still decently well done (again think simulation not a simulator)
to play the game you are going to need some cold war tech and strategy knowledge , to learn how sonar and radar works for example , as game models sound channels and ducting ,environmental (simplified but still impactful) radar and missiles have similar modelling, simplified by still fun enough to enjoy some realism.
It will take some reading depending on your current knowledge of cold war ear missile age tech and strategy. It is early access and has long way to to go for completion, but if you are into the era and weapons you will still enjoy it even at this stage of development.
It’s on a mega sale, you might want to check it on steam
